A long time coming on this project. I had been wanting to make a knife themed after the feel of a nice, classy watch. I wanted simple, understated, yet still has a little touch of flair to it. I wanted few elements, but for each of them to shine.
This is a long yanagiba made exclusively to cut fish. It’s a full 300mm single bevel blade out of 52100 steel, fully hardened, with a compound ura (backside concave grind).
It features a takedown handle of black paper micarta and stainless liners, all skeletonized and pocketed to reduce weight.
